Here are some of our favourite ways to use Carrigaline Farmhouse Cheese in cooking, from ourselves, and various chefs who use our cheese.
Pre-Appetiser
Use Carrigaline Farmhouse Cheese with salami, served on some fresh homemade brown bread.
Appetiser
Lightly grill slices of french bread on both sides. Spread with garlic butter and cover with sundried or fresh tomatoes. Replace under the grill for one minute. Place slices of Garlic & Herb Carrigaline Farmhouse Cheese on top and return under the grill until the cheese is fully melted. Serve immediately.
Carrigaline Thatched Pork Chop
(serves 4)
Ingredients:
4 Pork Loin Chops
Salt and Ground Black Pepper
Two Cooking Apples, peeled, cored and chopped
4oz/125g Carrigaline Cheese, grated or finely chopped
Method:
- Season chops and grill for 10-15 mins. on each side.
- Meanwhile, place apples in a saucepan with 3 tablespoons of water. Cover and cook gently until the apples form a thick pulp. Mix in half the cheese.
- Spread the apple mixture over the cooked chops. Sprinkle the remaining cheese over the top.
- Return the chops to the grill and cook until the cheese melts.
Carrigaline Stuffed White Fish
(serves 5)
Ingredients:
3 oz. Fresh Breadcrumbs
3 oz. Carrigaline Cheese, grated
1 Onion, finely chopped
1/2 teaspoon Dried Mixed Herbs
Salt and Ground Black Pepper
3/4 pint Milk
1 1/2 lb. White Fish Fillets, skinned
3 tbls/1 oz butter
1/4 lb Mushrooms, sliced
2 oz. Flour
2 1/2 tbls. Tomate Paste/Purée
Fresh Chopped Parsley
Method:
- Mix together the breadcrumbs, cheese, onion, herbs and seasoning with 3 1/2 tablespoons of the milk.
- Place half the fish on the base of a buttered shallow overproof dish. Spread the stuffing over the fish and top with the remaining fillets.
- Melt the butter in a saucepan and fry the mushrooms until soft. Add the flour, remaining milk, tomato paste/purée and seasoning. Heat, stirring continuously until the sauce thickens and boils. Pour over the fish.
- Bake at 375F/190C/Gas Mark 5 for 20 mins. Serve garnished with parsley.
Bacon Potatoes & Carrigaline Cheese
(serves 2)
Ingredients::
1 lb./500g Cooked Potatoes, cut into chunks
4 oz./125g Streaky Bacon, cut into small pieces
1 Small Onion, chopped (optional)
4 oz./125g Carrigaline Cheese (Natural or Garlic & Herbs)
Olive Oil, Salt and Pepper
Method:
- Fry the potato chunks, bacon pieces and onion with some olive oil. Season with salt and pepper.
- Sprinkle with grated or diced Carrigaline Cheese.
- Place under a hot grill until the cheese is melted and bubbling.
