Carrigaline Cheese Fondue
​

An easy way to make amazing fondue without even needing to go out and
buy a kit! Better yet, you can mix and match our different flavours to make
it personal to you! Follow our method and you'll be eating this delicious
dish before you can say cheese!!




Ingredients:
One small round loaf
Carrigaline Farmhouse Cheese Original (varies in quantity depending how many you a serving, 400 grams would suffice for a single person)
A lump melted butter.
Assorted fruit (whatever takes your fancy!)

Method:
  • Preheat oven to 150 degrees.
  • Cut the top of the round loaf off horizontally. This should leave you with a cap to fit back on the loaf later.
  • Then cut the inside of the loaf out neatly with a knife as shown in the picture to your right.
  • Melt a lump of butter and using a brush spread this over the bread that was removed from the loaf before chopping it into small, crouton squares, as seen on the far right.
  • Place the chopped bread on a preheated tray and put in the oven. Make sure to keep a close eye on them as they can over cook very easily! Should not take more than ten minutes.
  • Once the croutons are done leave them on a wire tray to cool. 
  • Chop your cheese and place in a microwaveable bowl. It is best to melt the cheese slowly, taking it out every 30 seconds to stir before placing back in the microwave.
  • While the cheese is melting cut your fruit and anything else you would like to try(chocolate if your feeling adventurous!).
  • Once the cheese is fully melted, pour into the round loaf, and dip to your hearts content!!

Carrigaline Cheese on Toast With
​a Twist

A dish that is delicious and simple! You don't need to be a masterchef
to pull off this golden oldie O'Farrell family favourite!

Ingredients
Four slices of bread (white/brown)
Four medium-sized tomato's
Carrigaline Farmhouse Smoked Cheese (as much as you want!)
A small clump of basil
Three Clonakilty sausages.

Method
  • First turn on your grill and lightly brown one side of each slice of bread.
  • As the bread is toasting, remove the sausages from the outer skin and blend in a mixer with the basil.
  • Take the bread out of the grill. Butter the uncooked side, spread your sausage and basil mixture on the bread. Then chop your tomato's into chunks and place a good portion of these on top.
  • Pop into the grill for a few minutes, make sure not to let the tomato's dry out by leaving it in too long.
  • Lastly, grate some Carrigaline Beech-Smoked Cheese on top and place under the grill until the cheese begins to look like a glaze.

Dish out and enjoy!!

Carrigaline Cheese Souffle

This recipe comes from YesChef magazine who created a
​beautiful dish around our Carrigaline Beech-Smoked Cheese.


Ingredients
1 large onion
60g of butter
1 tbsp freshly chopped thymed

15g brown sugar
40g plain flower
60g butter
1 shallot, finely chopped
225ml milk, extra may be required to loosen
200g Carrigaline Farmhouse Smoked Cheese
4 egg yolks
5 egg whites
Squeeze of lemon juice
Half a tsp of English mustard


Ramekin Lining:
1tbsp unsalted butter at room temperature
50g of dried white bread crumbs

Method:
  • Preheat oven to 190 degrees celcius. Finely chop the onion and gently fry off in 60 g butter with thyme until golden brown and add brown sugar until melted. Add flour and cook to a blonde roux; add mustad, then gradually add the milk and finally the Carrigaline Farmhouse Smoked Cheese and beat until smooth. Season and cook for 5 minutes whilst continually mixing. You may wish to loosen the mix with a little extra milk. Pull onto the side to cool.
  • Next take the 5 egg whites and whisk using a little squeeze of lemon to help stabilise until there is a firm peak. Place to the side again and now line 6 ramekins moulds with the soft butter and ensuring that you cover all areas. Once area is covered fill the mould with bread crumbs
  • Now go back to your onion sauce that should now be at room temperature add 4 eggs and beat until smooth. Once the mix is smooth take a small spoon of the egg white and mixing vigorously then with the rest of the egg white fold in gently but ensuring you are gentle. Then gently place mix into cups, place cups in a deep tray with water half way up the moulds and bake in the over at 190 degrees celcius for approx. 15-18 minutes. Once ready serve immediately on a nice garden salad with balsamic reduction.






Carrigaline Cheesy Garlic Bread​
​

A simple party pleaser that will leave your guests wanting more!

Ingredients
1 loaf of your favourite sourdough bread.
300 grams of Carrigaline Garlic & Herb Cheese

Method
  • Preheat your oven to 180 degrees Celcius.
  • Cut your loaf vertically and horizontally. Do not cut into the bread too deep as you want it to remain upright and not fall apart.
  • Once this is done, slice the Garlic and Herb Cheese and stuff it into the cracks formed by slicing the bread.
  • All that's left to do is stick the loaf in the oven for around five minutes and start enjoying the easy to pull out, cheesy bread bites.
